I made a big Mexican dinner for my boyfriend for his birthday! Here’s the recipe for spanish rice. ;)

1/4 cup (4 tablespoons) of butter or margarine
1 cup of uncooked rice
2 cups of water
1 Bay Leaf
1 dash of lemon salt pepper
1 fresh cut tomato
1 can of tomato sauce
1 spoon of minced galic
1/4 of an onion

In a saucepan, I put in the butter, then added the garlic and onions once it was somewhat melted. I then added the uncooked rice, tomotoes, and tomato sauce. Then poured in water, bay leaf, and the lemon salt pepper. Stir. And then let to boil. It’s a really simple dish. It takes about 30 minutes to cook. ^_^ Another spice you might think about adding is paprika. Too bad I didn’t have any. Enjoy the recipe, and let me know if you tried it.

I made this dish last weekend. There’s spanish rice, shredded beef, and avacado.

The spanish rice was fun to make, not to mention very easy! Here’s the receipe:

Cook rice.
In a frying pan, add oil, minced garlic, and onions.
Next add chopped tomatoes.
Wait til the onions are translucent, then add the rice and stir.
Slowly add half a can of chicken broth.
Then add in a can of tomato sauce.
Squeeze some fresh lime juice over the rice.
Cook until the broth is gone.
Then serve. :)
Add celantro to it if you like. Unfornately, I ran out. :(

For the avacados, add a bit of salt for flavor, although it’s not necessary.

I cooked this for dinner last nite. It’s veggie soup — very simple to make.

First, cook rice. Second, in a pot, pour in two cans of chicken broth (you can use beef broth too). Have the heat on medium. Add in your veggies — potatoes, carrots, brocolli, cauliflower, tomatoes, green onions, and mushrooms. Cook for about 45minutes – 1 hour. Make sure the potatoes are cooked. Serve over rice. You can add raw bean sprouts and cilantro over the soup as well (not shown).

Sauteed Bean Sprouts and Tofu

I made this today. :) Ingredients include, but not limited to: tofu, bean sprouts, vegetable oil, minced garlic, tomatoes, sesame seeds, green onion, soy sauce, salt, and pepper.

In a pan, pour a little bit of vegetable oil, and then half a spoonful of minced garlic. This is for flavor. Stir the garlic around so it wouldn’t burn. The pan should be on medium heat. Then add the bean sprouts, then the chopped tomatoes and green onion leaves. Cut your tofu into small squares and add. Add a dash of soy sauce, salt, and pepper for flavor. Leave heat on medium for about 15 minutes. When done, serve on rice, et viola!
