curry soup w/shrimp
I made this the other day. It’s Curry soup w/coconut milk & shrimp.

    ingredients:
    12oz peeled & deveined fresh shimp, halved lengthwise
    1 tablesoon red curry paste. if you don’t have red curry paste use regualr curry power(that’s what i used cos i couldn’t find the red curry paste…)
    1 14 1/2oz can chicken broth
    1 tablesppn fish sauce (optional)
    1 oz unsweetened coconut milk
    2 tablespoon snipped fresh basil

    Pour cooking oil into a large saucepan; preheat over medium-high heat, stir-fry shirmp and curry paste in hot oil for 2-3 min or until shrimp turn pink. Remove shrimp from saucepan; set aside.

    In the same saucepan bring the chicken broth and, if desired, fish sauce to boiling. Reduce heat.

    Simmer, uncovered, about 5 mins, stir in shrimp and coconut milk; heat through. Stir in basil.

    That’s it. hope your’s turn out better than mine. ;)
